If you are traditional foodies, try to taste the delicious pepes telengis, a traditional Balinese menu with main ingredient of telengis (remaining coconut oil deposits). It is byproduct traditionally coconut oil processing. Balinese cuisine has been popular since the past because it tastes good, nutritious and quite cheap. Although tasting just a little, it will feel very prominent, so a pack of pepes telengis is usually eaten with a plate of rice.

Pepes telengis has distinctive aromas and flavors. In the past, pepes telengis can only be found in food stalls at villages. Sometimes, it is also sold in traditional markets along with porridge or cassava rice. Old people used to live in rural areas will miss enjoying this pepes wrapped in banana leaf. Fortunately, pepes telengis can now be found in urban areas. “I often send pepes telengis to Denpasar. It happens there is an order. Thus, almost every day I make pepes telengis,” said Mrs. Tini, a farmer from Tabanan who used to make pepes telengis.

Before making it, it may be necessary to look at the nanusin (oil making) process that can produce telengis. First of all, make coconut milk from dry or even old coconut. Because the coconut is old, it will usually produce more oil. When making coconut milk, please begin with grating the coconut. The type of coconut for oil is different from the one for cake. Then, squeeze, so that it can produce coconut milk. On the first squeeze, do it without water, while the second use water to help.

The coconut milk is then fried. In addition to reducing water content, it is also meant to separate the clump of protein. The protein clumps will form a deposit at the bottom of pan. This deposit is called telengis. The oil is then poured into a bottle or other container. The deposit of coconut milk is then filtered by using a cloth or a filter with a fine hole that can also collect the deposit of coconut milk, telengis.

How to prepare it? At first, ground all the spices until becoming smooth. Then, add telengis and mix well. Combine the sweet leaf or moringa leaf and then cook it until well done. Wrap it with banana leaf in tubular shape and lock each tip with bamboo stick. After that, steam until cooked, and then bake it. Well, after generating a distinctive aroma, take out. Now, it is ready to serve. (BTN/015)
