By and large, the presentation is divided into two, namely for the offerings to God through oblations as well as presented through buffet invitation.
The jukut don belimbing is commonly served with other menus processed by local society. Invitees can pick out and choose their preferred menus. Unfortunately, this star fruit leaf is only liked by certain people. Children are less interested because it’s slightly bitter. However, for adults this menu is very tasty.
For people on the Island of the Gods, the star fruit leaf is taken advantage as a vegetable ingredient as it is quite tasty. Other than being easy to get, this leaf is also good for digestion. However, the star fruit leaf used is not arbitrary, but the young one (not too old and not too young). Besides, it does not belong to the type of star fruit having sweet fruit, but the fruit is sour and whitish.
Lately, the star fruit leaf vegetable is also served at hotel, but has not something to do with ceremonial activities. In a chef competition, the star fruit leaf vegetable also becomes one of the contested menus. Of course, this vegetable has been processed in a modern way, so that it can be enjoyed by the tongue from various regions and even countries.
The ingredients used to make this vegetable are star fruit leaf, coconut milk and boiled pork or chicken blood. Meanwhile, the spices in use include onion, garlic, shrimp, coriander, chili, ginger, pepper, aromatic ginger, candlenut, palm sugar, salt and a few pieces of lime leaves.
How to prepare it? At first, finely wash the star fruit leaf whose number is tailored to the needs. After that, boil until cooked and then squeeze the leaf to reduce its water. It is also meant to eliminate its bitterness as well as make the leaf tenderer.
The spices are divided into two. A portion is used to make fine base genep (complete spice) and another portion to make raw spice. All the ingredients to make base genep are cut and then grounded or pureed by blender, so it becomes smooth. Then, fry it until cooked. The other spices namely onion and chili are sliced thin without frying.
Next, prepare a basin and put the base genep into it along with coconut milk and boiled blood. After that, mix them well. Put sliced red onion and chili and add the thinly sliced brown sugar. Put the boiled star fruit leaf and then mix together well. Add lime leaves having been sliced thinly and salt (to taste). Stir again evenly and now it is ready to serve. (BTN/015)
