''Bebek Pesisir'' in Brezze Restaurant Kuta

Bebek Pesisir  in Brezze Restaurant KutaGrand Inna Kuta Beach Hotel is a strategic place for a vacation. This four stars hotel built in the center of tourism in Bali. It offers combination of traditional and modern architecture. In addition to accommodation, this hotel also offers special Indonesia menus especially Balinese food which can be enjoyed at Breeze Restaurant of Grand Inna Kuta Beach Hotel. Breeze Restaurant located on the second floor and opposite the Kuta Beach. Here, the tourists can enjoy the foods while watching the beauty of white sandy beaches with and charming sunset. Due to its location made the Breeze Restaurant present a new menu named Bebek Pesisir (coastal duck).

Bebek Pesisir consists of duck breast and thigh meat. The process of making the dish is using traditional Balinese spices. Uniquely, this menu is cooked by lengis tandusan (virgin coconut oil) and served by three kinds of sauces like sambel tabia, bongkot and matah. "Both the meat and sauces, using lengis tandusan because it is healthy and free of preservatives," said I Wayan Suwanda Ariyasa, the Senior Chef of Breeze Restaurant.

Suwanda explained, cooking bebek pesisir is not difficult. First, duck meat boiled in water containing basa genep (spices) until ripe. Then it is fried when the guests order the menu. To complete the taste of Bebek Pesisir, it is accompanied by sambal tabia which made of natural ingredients. "Sambal tabia consists of chili, tomatoes, onions and garlic. All of them are steamed then pulverized together with sugar, salt and shrimp paste,” said Suwanda.

In addition to sambal tabia, Bebek Pesisir also served with sambal bongkot and matah.  "sambal bongkot consists of kecombrang, onion, garlic and chili. All ingredients thinly sliced and mixed by salt, lengis tandusan and shrimp paste after that it pan-fried. “Sambal matah consists of onion, chili, salt, lemongrass, shrimp paste and lemon leaf. Then mixed with lengis tandusan without fried, "added Suwanda

Bebek Pesisir is served very unique where it uses banana leaf as base of food. On banana leaf put sambel tabia, bongkot and matah, nasi tumpeng (rice cone) and urab vegetables. Usually, Bebek Pesisir served with smoothies drink. Hmmm... it is very delicous! Mostly, this food is ordered by tourists from Australia and Jakarta. "Beside Bebek Pesisir, Breeze Restaurant also offers ribs, sup buntut sapi, fried fish and others including continental food, "he concluded (BTN/ocha)
